My wire-haired dachshund has been eating home cooked food for about 1 1/2 years now. She is following a diet prescribed by a dog dietician to ensure that nothing is missing. For fibres, I give her cooked broccoli with every meal, which she loves. The other alternative is to give your dog fresh, overcooked pumpkin and mix it with the food. It is excellent for regulating the doggies stools. Give it at least 48 hours to work. I know that in the US you also have canned pumpkin. I am sure that could work as well.

The carbohydrates in her diet are also fibre-rich as they are based on brown rice, quinoa and sweet potatoes.

As I always pick-up my doggie's poo it has to be just right - in terms of consistency and timing. (Twice a day.) :D
